Great Pumpkin Results

It was great to see everyone at the Agricultural Commission's Pumpkin Festival despite the clouds & drizzle. Fun was had by all whether it was decorating pumpkins , playing games or petting a baby bull. Thank you 4-H for bringing all your animals.

The winners of the contests were William Hauser for his 10.5” sunflower head, Hannah Hodder for her 33 lb pumpkin and Alyssa Phillips for her Pumpkin – Orange Bread.

Here is the winning recipe –  
Pumpkin – Orange Bread (makes 2 loaves) submitted by Alyssa Phillips
3 cups flour 2 cups sugar
1½ teaspoons baking soda ¾ canola oil
½ teaspoon baking powder ¾ orange juice
1 teaspoon salt 1 can (15 oz) pumpkin puree
1 Tbsp cinnamon 2 cups walnuts or pecans (optional)
½ teaspoon nutmeg ¾ cup dried sweetened cranberries ( or whole cranberries)
½ teaspoon allspice ½ cup raisins (optional)
4 eggs   
  • Preheat oven to 350 degrees. Butter two 8 ½ x 4 ½ x 2 ½ “ loaf pans. Dust pans with flour or better, dust with plain bread crumbs.
  • Sift the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice.
  • With an electric mixer, beat the eggs and sugar for 1 minute, Beat in oil, orange juice and pumpkin.
  • Gradually add dry ingredients to the batter until it is smooth.
  • Stir in nuts, cranberries, and raisins. Pour into pans.
  • Bake at 350 degrees for 1 hour 15 minutes if you are using metal pans. (Yes it really does take that long, but check at 1 hour 5 minutes.) If you are using glass pans, time will be more like 1 hour 5 minutes.
  • Cool slightly on a rack for 15 minutes, then turn breads out of pans to cool completely.
  • Enjoy! Great for breakfast, brunch, or a snack. Bread is moist, not too sweet, and flavorful.
